Grandma Thelma's Southern Cornbread Dressing

Back Story of this Recipe

Grandma Thelma had 11 kids. My mother was one of them. This is her cornbread dressing that was served on Thanksgiving and Christmas. Most of us kids continues her tradition.

Description

Savory cornbread dressing, baked separate from the turkey but served with gravy over it.

Ingredients

4 tbsp of margarine or butter (the original recipe uses bacon grease, and that's what I use, too)
1 1/2 cups yellow corn meal
1 cup flour
2 twp baking powder
1/4 tsp baking soda
1 tsp salt
2 eggs
1 3/4 cups buttermilk or soured milk.(milk with buttermilk powder woks, too)
1 medium onion diced
3 - 4 stalks of celery diced

Preheat oven to 450 degrees

Put grease (or margarine or butter) into a 10 inch cast iron skillet ( you can use a 9" X 9" pan, but it wont taste quite the same.) Place in the oven for 3 to 5 min until the grease is melted and the pan is hot.

In a large bowl, mix together the dry ingredients.

In a medium bowl, whisk together the eggs and buttermilk, then slowly whisk in the melted grease.

Stir wet ingredients into the dry ingredients until just moistened. Batter will be lumpy--do not over mix!

Add in the diced onion and celery.

Pour batter into skillet and bake at 450 degrees for 25 min or until toothpick comes out clean.
